Ferns
Country Store proudly carries 100% pure, natural and
unprocessed Carlisle Honey. Town residents and beekeepers
Avril Taylor and Ed Erny are a small producer with
several hives on their own property located in a rural
area away from commercial property and agricultural
chemical use.
And
man, oh, man do we ever sell a ton of it at Ferns! In
fact, we sell an average of over 250 lbs. a year! We
even had a customer stop by who bought a couple of jars
to bring with him as gifts for his business trip to
Japan!
Carlisle
Honey is raw, unheated and unfiltered. That is, their
honey is only strained to remove any honey comb wax
so it still contains the original pollen. Folks swear
by the antioxidants contained in honey. And local honey
is said to help alleviate allergies because the bees
are hitting the same plants that are causing you problems.
They
don't heat the honey like commercial honey packers do
to break down any sugar crystals. The fact is, that
heat above 115 degrees destroys the antioxidants, important
enzymes, vitamins and other beneficial attributes. Also
many people find that heated honey looses much of its
natural aroma and flavor.
Typically
at Ferns, we receive a new batch of Spring Blossom Honey
by July 4th. Light in color and very sweet tasting,
this honey is from the early spring blossoms of fruit
trees and spring flowers. It's truly some of the sweetest
and finest tasting honey you can find. Then the bees
produce Summer Wildflower Honey which is a dark amber
color with a full-bodied natural flavor. This honey
is produced from nectar gathered in July and August.
It's richer color and deeper flavor reflect the rich
colors of summer. And as the summer wanes on we also
have available a very limited supply of Honey Comb which,
we hear tell, Europeans love to cut up and spread on
biscuits and breads for a delectable treat.
You
can also pick up a lovely Wooden Honey Dipper that is
made from nicely turned and polished wood. It's the
ideal kitchen dipper utensil to scoop honey from the
jar and drizzle it on pancakes, warmed croissants, buns
or muffins. (All of which are available at Ferns, of
course!)
In
2005, Beekeeper Ed received the prestigious Beekeeper
of the Year Award from the over 200-member Middlesex
Beekeepers Association.

Tip:
Store honey at room temperature. If your honey becomes
crystallized simply warm slowly to liquefy it.
